Fudgy brownies stuffed with chunks of chocolate chip cookie dough and topped with ice cream. These cookie dough brownies are everything.
It feels like it’s been a while since I shared brownies on the site. I’ve been craving brownies all week so my daughter and I rushed downstairs on Sunday in our PJs and made a batch of these cookie dough brownies before we started a movie marathon. I don’t think it’s too much of a stretch if I said that these were definitely one of our favorite brownies to-date. There’s something about eating a brownie directly out of a skillet topped with tons of ice cream while in your PJs that is so satisfying.
Last month, I went with some friends to New York to meet with the American Dairy Association to learn all about the dairy industry that basically fuels my ability to make all my buttery, creamy desserts that we all love. I was so excited because I love visiting farms and learning more about where the food we get comes from. Plus, there was also a cheese tour. And we all know how much we love the cheese.
One of my favorite parts was watching the entire process of making their cheeses. We were able to be right in the factory among the workers and watch what they did and how they did it. My favorite part was seeing the melted cheese with all the mix-ins being stirred, then seeing how they packaged the still melted cheese into its containers before they were left to set. We saw them working on their chipotle & habenero cheese and it smelled amazing!
My favorite part of the trip was visiting Noblehurst Farms. It was raining, so we didn’t get to explore as much as we would have liked, but it was still so great to see the cows which were just darling creatures who obviously were enjoying hanging out indoors away from the rain.
I loved learning how much the farmers care about their animals. I understood that from my last farm tour, but the passion that I felt from the farmers here was so present, you could feel it in everything they said and did. I was impressed at how much education they had and the science they put into ensuring their cows are healthy both physically and emotionally.
Perhaps my favorite part was learning how they were using a digestor to convert what would otherwise be waste from nearby companies into energy that runs the farm. Stuff like that is so cool to me.
It really makes me appreciate the process it takes to produce the milk that makes my butter and ice cream for cookie dough brownies.
The recipe is super easy to make. I tend to use the same bowl to make the brownies and the cookie dough. I don’t wash the bowl, I just make sure I scrape the bowl as clean as I could with my spatula. So it makes clean up nice and easy.
My favorite part about cookie dough brownies is that any cookie that is exposed to the top of the brownie baked up crisp and chewy, while the inside remains as thick chunks of cookie dough. Ingredients
Brownie
1 cup all-purpose flour
1/4 teaspoon salt
2 tablespoons cocoa powder
4 oz chocolate (I use semi-sweet)
3 tablespoons unsalted butter
1/3 cup vegetable oil
1/2 cup granulated sugar
1/2 cup brown sugar
2 large egg, room temperature
2 teaspoons vanilla extract
Cookie Dough
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons unsalted butter, room temperature
1/4 cup brown sugar
3 tablespoons granulated sugar
2 tablespoons whole milk (or heavy cream)
1 teaspoon vanilla extract
2/3 cups chocolate chips
Instructions
Preheat the oven to 350 degrees F.
In a small bowl, mix together the flour, salt, and cocoa powder for the brownies. Set aside.
Place a double boiler on the stove and add the chocolate, butter, and oil. Heat until the chocolate and butter are melted. Stir until well-combined. Remove from heat.
Stir in the granulated sugar and the brown sugar. Quickly stir in the eggs and vanilla, then mix in the flour mixture. Place the brownie mixture in a large cast iron skillet.
In the small bowl you used for the brownie flour, add the flour, baking soda, and salt for the cookie dough. Set aside.
Beat the butter and both sugars together until light and fluffy. Stir in the milk and vanilla.
Mix in the flour mixture until just combined, then fold in the chocolate chips.
Roll chunks of the cookie dough into balls and hide inside the brownie mixture, Take a few pieces of the cookie dough and place on top of the brownie, if desired, to bake up crisp bits of cookie.
Bake the brownies for 30 – 35 minutes, or until a toothpick inserted in the middle comes out clean.
Serve at room temperature with a few scoops of ice cream!
